Pad Thai Noodles with Tofu Recipe!

A tasty, healthy and filling Thai Dish, that will impress your guests.

Ingredients:
- 1 package Flat wide rice noodles
- 2 Boneless skinless breasts of chicken cubed (optional)
- ½ lb Fresh shrimp or crab (optional)
- ½ cup Firm tofu diced (optional)
- 3 Green onions, julienned
- 1 Carrot peeled and julienned
- 1 Red bell pepper julienned
- 1 Yellow bell pepper julienned
- 1 cup Green cabbage shredded
- 1 cup Snow peas trimmed
- 2 Eggs whisked
- ¼ cup Finely chopped peanuts
- 2 Cloves garlic minced
- ¼ cup Chopped cilantro/fresh mint
For the sauce:
- ¼ cup Fish sauce
- ¼ cup Rice vinegar
- ¼ cup Lime juice
- 1tbsp Sesame oil
- ¼ tsp Chili flakes
Instructions:
• Combine the ingredients for the sauce in small bowl and set aside.
• Cook the noodles in boiling water for 5 minutes until just cooked. Do not overcook. Drain and rinse the noodles with cold water.
• Heat a wok and add 1 tsp of vegetable oil.
• Add the chicken to he wok and stir fry until the chicken has cooked through about 8 minutes.
• Next, add the seafood, tofu (if using) and he eggs to the chicken in the wok and cook for 5 minutes. Remove from the wok and set aside.
• Add all the vegetables and he garlic to the wok and stir fry for 5 minutes or so. Then add the chicken, seafood and tofu back to the wok along with he noodles. (You may need to rinse the noodles in cold water before stir frying as they have a tendency to stick together.) Stir fry for a further 5 minutes.
• Stir in the sauce and toss with the ingredients in the wok until heated through.
• Garnish the Pad Thai with the peanuts and chopped cilantro and serve.
